In fact, every aspect of Plymouth’s process is done with traditional artisan methods in mind. Their factory was originally built in 1890 by John Coolidge, the father of 30th president Calvin Coolidge, and revitalized in 2009. A lot of the original equipment is used by their team as well, and each cheese is hand waxed to preserve their traditional flavors. Every cheese from Plymouth is made from raw cow’s milk sourced from local herds raised with no antibiotics or additives. This ensures the freshest raw milk which adds consistency to their products.
