Black Truffle Cheddar by Plymouth Artisan Cheeses flips the book when it comes to truffle cheese making. Traditionally, cheesemakers make truffle cheese with sheep’s milk, but Plymouth uses raw cow milk in this version. Aged for 60 days and infused with real Italian truffles, this isn’t your grocery store truffle cheese. Plymouth uses summer scorzone truffles, which have a milder flavor than their winter cousins.
The cheese is very mellow and has earthy flavors combined with a smooth texture.They make each wheel with the now-famous granular curd recipe resurrected by Plymouth master cheesemaker Jesse Werner. The recipe is based on an old, colonial style method of cheesemaking not seen in today’s cheeses. Plymouth also hand-waxes each square using traditional preservation techniques. This is a one-of-a-kind cheddar.

Plymouth Artisan Cheese was the project of cheesemaker Jesse Werner who revitalized the Plymouth Cheese Factory in 2009. The factory originally opened in 1890 and is now the second oldest cheese operation in the United States. Plymouth even restored some of the original equipment that they use in production today. Their award-winning cheeses are taking the cheese world by storm as they continue to come up with new and exciting products every year.
