Sage and Herbs Cheddar
Plymouth Artisan Cheeses describes their Sage and Herbs Cheddar as “the Bohemian cousin” of their Plymouth Original Cheddar. This cheddar uses their now-famous granular curd recipe and mixes a blend of herbs including sage, thyme, rosemary, lavender, and oregano. The buttery texture of their original cheddar remains in this cousin, and it’s loaded with flavors from the mix of herbs.
Aged for sixty days, Sage and Herbs Cheddar is a little younger than some other cheddars offered by Plymouth, but it doesn’t take long for all the flavors to dig into this cheese. Each bite is creamy and savory at the same time. Plymouth uses organic, raw milk from local Vermont cows in each of their cheeses. This gives each wheel distinct flavors that separates it from many other American cheeses.
Sage and Herb Cheddar is a favorite during the holidays but also perfect on a cheese or charcuterie board for many occasions. Use this cheddar to give a sandwich a kick or pair it with fruit to mix both sweet and savory flavor. Sage pairs well with Riesling and Marsala, and beer drinkers could pair it with a fruity ale.
Plymouth Artisan Cheese comes the mind of master cheesemaker Jesse Werner. In 2009, he took over the Plymouth Cheese Factory and completely revitalized the warehouse. The factory produces now world-famous cheeses using a traditional granular curd recipe. They hand-wax each cheese for preservation just as it was done over a hundred years ago when the factory first opened. They even use some of the original equipment in production.
