He believes in the character of this cheese which takes on savory flavors from onion, garlic, red peppers, and green peppercorns. Inspired by French culinary traditions in using poivre vert for sauces and cheeses, this cheese is as complex as it is flavorful.
With all of its complexity, Plymouth Artisan uses traditional cheese making methods and granular curd recipe to bring the flavors together. They age each wheel for sixty days and hand-wax it for preservation just as they did in the 19th century. Plymouth Artisan Cheese sources all of their milk from a single herd raised near the cheese factory. It’s cheese made with the freshest, purest milk Vermont has to offer.

Located in Plymouth, Vermont, the Plymouth Cheese Factory is the second oldest cheesemaking factory in the U.S. Jesse Werner took over the factory in 2009 and began an amazing revitalization project with the factory. They all the cheeses in the factory by hand using traditional recipes and standards. They still use some of the old equipment from the early 20th century. The factory has since won many awards and gained worldwide fame for their granular curd, hand-waxed creations.
