Liwa by Tomales Farmstead Creamery is three-day-old fresh goat cheese made with 100 % goat’s milk in West Marin County, California. This versatile, fluffy cheese melts in the mouth like yogurt and can be paired with nearly everything. The complex flavors and citrus notes tinge lightly in the youngest and softest of the cheeses offered by Tomales.
Modeled after a European farmer’s style cheese, this creamy delight is a little feathery in texture and the goat-forward flavors bleed through the yogurt-like tanginess with every bite. The goat’s milk used in the process is milked twice daily right on the farm in Tomales and contains no additives or fillers.
This cheese is one of the most versatile cheese we offer and goes with nearly everything. Try it on mini baked potatoes for a solid appetizer. It also goes great with some fresh summer cherry tomatoes, basil and olive oil. Tamara Hicks and her husband David Jablons bought their farm in 2003 and began the Tomales Farmstead Creamery in 2012. Each cheese in their catalog is named after the Miwok tribe who were the original inhabitants of the land the farm was built upon. Liwa actually means water in the Miwok language. The duo takes the same great care of the land that the original inhabitants did and know the names of every goat (over 200) on the farm by heart.
