Gruyere

A relatively new cheese, Gourmino Gruyere wasted no time anchoring itself in the palates of cheese-lovers and connoisseurs everywhere, winning the "Best Cheese of the World" accolade at the 2008 World Cheese Championships (yes, there is such a thing, believe it or not!). Gourmino Gruyere is made using the best milk of Brown Swiss cows from small coop farms. This raw milk is turned into delicious gruyere wheels that are sent to age in the caves of Langnau for about 6 months, developing rich and complex flavors. The most predominant flavors are of toasted nuts, caramel and a fresh floral quality. The texture is hard, on the drier side but still elastic. Use this cheese for a cheese board, paired with fruits and nuts (of course), but also feel free to use it in recipes as it melts incredibly well. Bring to room temperature before serving. Pair with a Sauvignon Blanc wine.
