Goats, and goat cheeses, are a way of life at Capriole, a 30-year-old – and going strong! – creamery in Southern Indiana. Capriole started making French-style chevre when you couldn’t imagine eating a good goat cheese outside of France, and they did such an amazing job, not only replicating old-country recipes, but also goat cheeses with their own unique touch, that today they're one of the most reputable creameries in the country.
This simple fresh goat log is modeled after the creamy, tangy fresh chevres you can find in most farmers markets in the French countryside. It’s deceptively simple but full of complex, refreshing flavors that we so associate with a great goat cheese – tangy and bright, with notes of lemon, a touch of acidity. Hand-ladling (like all Capriole’s fresh chevres) makes for a creamy, light and superbly rich texture that feels like velvet on the palate.
This is an incredible versatile chevre. Equally at home a cheese board drizzled with honey and sweet preserves, this fresh goat log is also perfect for cooking, adding richness to quiches and tarts, and adds lightness to fatty dishes. Try in a goat cheese cheesecake for a unique dessert or blend with fresh herbs and a drizzle of honey for an unexpected dip. Pair with crisp whites like Sauvignon Blanc or light citrusy beers.
This chevre was a 2003 American Cheese Society winner and for good reason, for this delicate, light yet velvety cheese is a delight to eat.
