Mothais

At first glance, Mothais looks like your regular brie or camembert. Small and round, it has that snowy white bloomy rind and creamy, melting texture. However, as Mothais is made of goat's milk, you'll notice a difference in the aroma, which is much stronger and woodsy, as well as an earthier flavor. Mothais is aged in a moist cellar for about 6 weeks, and then dried over a chestnut leaf - which remains wrapped around the cheese once it's ready for sale. The texture is soft and creamy, the flavor delicate, growing more dense and assertive as it ages. The rind develops some green or blue mold patches - that is perfectly normal and a natural occurrence. Bring to room temperature and remove the rind before serving. Use for a cheese board, on a toasted Panini with roasted tomatoes and smoked salmon, or diced over a salad with walnuts. Pair with Chardonnay or Cabernet Franc.
Ingredients: Pasteurized goat's milk, salt, lactic ferments, rennet.
