Kenne by Tomales Farmstead Creamery is supple, fluffy, soft-ripened goat’s milk cheese. This soft cheese has a dense and creamy texture very similar to Italian soft cheeses. It has subtle earthy notes when you taste it and, because of the heavy creaminess, coats the mouth and lingers. There are hard cider aromas that really start to aerate when you cut into the square.
As the milk is always of high quality at Tomales Farmstead, this creates a balance between the dense creaminess in the center and the wrinkly rind. Keene is a 2019 Good Food Awards winning cheese that topped out in a pool of over 2,000 entries (200 winners selected in 16 style categories). Proprietors Tamara Hicks and David Jablons and cheesemaker Ashley Coffey combined their knowledge of Italian and French soft cheese ingredients and processes to create this wonderful cheese. They add a Geotrichum candidum yeast to their milk before turning it into curds to create the wrinkly texture. After almost a week of aging at 50 degrees Fahrenheit, the cheese is perfect and ready to be sold.
This fabulous goat cheese pairs well with any of our fantastic jams and dried fruits, especially figs. Pair Kenne with a light beer or with sparkling white wines. The Tomales Farmstead Creamery is located just North of San Francisco. This area was originally occupied by the Minok tribe and so, all of the cheeses are named after Minok terms. Kenne (pronounced ‘kennay’) means one in the Minok language. Since 2012, the Tomales Farmstead Creamery has produced a variety of cheeses including goat, sheep, and mixed milk that are made using the farm’s East Friesian livestock.
