Storing foie gras

FRESH FOIE GRAS

Storing fresh foie gras is much like storing any other meat product: it should always be stored in the fridge or freezer. It keeps up to 2 days, for best flavor and texture. Keep it in its original packaging (usually a vacuum seal) until you’re ready to use. You can freeze fresh foie gras and it will keep for about one year, but don’t re-freeze once defrosted.

FROZEN FOIE GRAS

Raw lobes of foie gras that have been frozen and arrive frozen to your home should be put in the freezer immediately unless you’re going to consume them that day. Keep frozen foie gras in its original packaging (usually a vacuum seal) until you’re ready to use. To defrost a lobe of foie gras, leaveit in the fridge for a day or two until fully thawed. Foie gras is flash-frozen, a method that fully preserves the wonderful texture and flavor of the liver. Once defrosted, never re-freeze.

MICUIT FOIE GRAS

Micuit means "half cooked", and foie gras micuit is just that, liver that is only half-cooked. This method of preserving the foie gras is very simple, involving just a bit of heat, enough to pasteurize the foie gras and make it safe to eat, but allowing it to retain a soft texture and a rich flavor. Micuit foie gras can be eaten without any further preparation. Keep refrigerated before and after opening.

FULLY COOKED FOIE GRAS

Mousses, blocs and pates of foie gras are prepared products that have been fully cooked prior to canning or jarring. Storing foie gras that is fully cooked is easy, as these products don’t require any refrigeration and can be stored in the pantry. Shelf life will depend on the expiration date on the packaging, usually over a year. Once opening, store fully cooked foie gras in the fridge and consume it within two or three days.

I have inherited some confit d'oie andfoie gras d'oie entier with a use by date of 2016. Are they still safe to eat?
