The secret is that although foie gras is high in calories, it is not unhealthy. The key to foie gras nutrition is that the fats that make up the liver are good fats, mono-saturated and poly-unsaturated fats. They act on the body by lowering the levels of bad cholesterol and raising the good cholesterol levels in the body.

The French have created some of the richest, most calorie-laden foods in the world. Butter, triple cream cheeses, sausages, tarts, foie gras, the list goes on and on. One would logically think that they must be a fat, unhealthy nation, but au contraire, mon ami!
