Provolone Piccante - Aged 12 Months

Our delicious Provolone Piccante is a semi-hard cheese from Italy and is “pasta-filata”, an Italian term that means ‘spun paste’, which is a particular technique used when preparing the cheese - Mozzarella is probably the most famous pasta-filata. This complex cheese boasts a full-bodied and buttery taste, with a slight snap to its finish that comes packed in a natural rind that is covered in wax.

It is typically curdled using either goat, lamb or calf rennet, giving it a stronger flavor along with the aging process. The 12-month aging process is what gives this intense Provolone its distinctive, sharp flavor in contrast to its younger, sweeter cousin, Provolone Dolce, which is only aged for 3-4 months.

This impressive Provolone Piccante is a star on an antipasto plate – serve it alongside some Italian olives and thin slices of Prosciutto di Parma with rustic Italian to get any dinner party going. A popular grating cheese, we recommend grating over pizzas, pastas and anything else that may call for cheese toppings – especially tasty when accompanied by a full-bodied red like Nebbiolo. You can also serve as part of a cheeseboard featuring red grapes, pears and figs to enhance its bold flavors.
