Garrotxa
Garrotxa is a very unique, very old Spanish goat’s milk cheese from the region of Catalunia that went nearly extinct until it was revived by some young and entrepreneurial artisan cheesemakers. It went from near extinction to one of Spain’s most popular cheeses today, thanks to a delicious flavor and palate-pleasing profile.
This goat’s milk cheese comes from the Pyrenees region, so it’s very much a classic mountain cheese, firm, with a hard and moldy rugged rind that hides a brilliant white pate. The texture is firm but cakey and dense, while the flavor is rich and lactic, full of the flavors of the lush grass pastures that feed the goats – lush and rich, grassy and earthy.
A good choice for a goat cheese on a cheese board, Garrotxa also works beautifully on salads, shaved over toast for a delicious crostini, or even grated over pasta.

A: The shelf life of the uncut cheese is around 2 months. Once unwrapped and cut it should be used within 2-3 weeks. The cheese should be kept refrigerated both before and after opening.
