Olympia Provisions’ head salumist (yes, that’s the job title; yes, they do exist; and yes, Olympia does have one), Elias Cairo digs deep into his Greek roots and recreates this traditional Greek-style salami using an old family recipe passed on by his grandfather.
Pronounced (loo-KAH-nik-ah), Loukanika is made with hand butchered, 100% all natural Northwest pork, blended with garlic and cumin in equal parts, then flavored with orange zest.
