Less sweet than Gold Seal, softer but with a bit more acidity. From the family-owned and run Acetaia San Giacomo in the Region of Emilia Romagna, comes this spectacular example of true Balsamic vinegar. This aged balsamic is rich, thick as molasses and sweet with a tart edge. While most manufacturers use 5 different type of barrels for aging the vinegar, San Giacomo is known for using 7 - oak, chestnut, juniper, cherry, mulberry and acacia. Each distinct wood infused the vinegar with flavor and texture, enriching the liquid.
