Many left, but the ones that settled were mainly goat herders who evolved into cheese producers. They named the cheese cheblis (‘goat’ in Arabic) and then name transformed into Chabichou over time. Fortunately, cheesemakers continue to use traditional methods to produce some of the freshest, flavorful goat’s milk cheese you’ve ever tasted.
