Plymouth Original Cheddar by Plymouth Artisan Cheeses is full-bodied and creamy yet still finishes with cheddar tanginess. It’s a very balanced cheese. This is the cheese that started it all at Plymouth Artisan Cheeses. It’s the basis for all of their wonderful granular curd recipes made at the restored factory in Vermont. Basically, it’s a cross between a traditional farmhouse cheddar and Colby. This cheese has butter, fruit, and nut notes and is perfect for a palate used to stronger flavored cheeses.
The recipe comes from a frayed scrap of paper dating back to the Coolidge-era that was discovered taped to the walls of the old Plymouth factory. They revitalized this formula along with the factory when master cheesemaker Jesse Werner took over in 2009. It’s aged for a whole year to build up the sharp, rich flavors that linger with every bite. Like all the curd recipe cheese at Plymouth, it’s made with raw milk from local organic cow herds.

Shred a little over a fresh green salad to give it a little extra pep and tanginess. Try it with sliced baguette bread or water crackers as well. Plymouth Artisan Cheese results from cheesemaker Jesse Werner’s vision to revitalize the Plymouth Cheese Factory in Plymouth, Vermont. The factory is the second oldest cheese operation in the U.S. and began operating over 100 years ago in 1890. The founder of the factory was John Coolidge, father of the 30th U.S. president Calvin Coolidge. Every year, Jesse, brings back a little taste of Old-World Vermont with his modern takes on colony-age recipes. His award winning cheese have brought the factory back to live and worldwide fame.
