Orzo Pasta
We love orzo, a short Italian pasta made from semolina flour that's shaped like a big grain of rice. Orzo is Italian for barley, which along with its shape makes most people confuse this pasta for a grain. Like most short pastas, orzo can be served by itself with a flavorful sauce, but above all shines when used to give structure and heart to dishes like casseroles, soups like minestrone and salads. Orzo salad served with spinach and feta cheeses is a superb spring dish, while a delicious orzo risotto is perfect for the colder months.
