Quicos - Crunchy Salted Corn Kernels
If you’ve ever travelled to Spain, chances are you’ve savored these crunchy little corn bites. Quicos are a made with a special giant variety of corn from Peru, making them larger than other corn types you’ve seen. The large size makes for lighter, crunchy kernels.
Quicos are made by soaking the kernels in water, then frying them in oil, and then finally given a light seasoning with salt. The result is crunchy, salty without being overwhelming, and wonderfully light – really, really addictive! We love to serve Quicos as part of an authentic Tapas platter, or just with a regular cheese board or charcuterie plate. Or just go the simplest route and serve them by themselves, paired with a cold, tasty beer. The perfect snack for game night, or to savor something different for movie night, these are always on hand in our pantry.
