French Siberian Sturgeon Caviar (A. baerii) - Malossol
The new wave of premium farmed caviars brings us this fabulous Siberian Osetra, farm-raised and harvested in the Aquitaine region of Southwest France. The conditions at the caviar aqua farms mimic those of the Siberian rivers, the native environment of the large Siberian sturgeon, Acipenser baerii. Baerii caviar – also known as Siberian Osetra – has large, glossy dark grey pearls with a nice firmness and pop, and a smooth and buttery texture. The flavor is very close to Osetra caviar, with hints of sweetness and lingering earthiness. Serve this fine caviar with blini, toast points, or spoon right from the jar.
