With 53.8% cocoa content, these chocolate chips have a well balanced bitter flavor, with subtle sweetness and medium intensity. The medium viscosity and liquidity makes these chips suitable for all baking applications, including enrobing and molding pralines, hollow figurines, fillings and ganaches, and decorating. This chocolate is made with fine cocoa beans, natural bourbon vanilla and 100% pure cocoa butter. Callebaut is one of the rare chocolate makers that still selects, roasts and grinds its own cocoa beans, the beans are roasted in their entire shell, to protect them and keep in all the aromas and subtleties.
