Jumbo Lump Crab Cakes
Crab cakes have been a long-standing tradition on both the east and west coast of America for centuries, and over the years certain unspoken rules have been created surrounding them. While all crab cakes are made from crab, the truly great ones are made from jumbo lump meat.
Jumbo lump crab meat is sourced from some of the larger muscles on the crab, most specifically the swimming legs. Highly prized for their bright white color and more robust flavor profile, the lump meat is regarded by many to be the best available.
While today the crab cake may seem rather quotidian due to its ease of availability, at its heart, it’s always been a luxury food.
