Cheddar - Aged 12 Year

The mark of a superb cheddar is easily recognizable: crystals. Lots of them. White calcium lactate crystals that form throughout the pate of the cheese with the aging, giving it a wonderful crunchy texture. This 12 year aged cheddar is the epitome of what cheddar should be. Smooth, rich, buttery and sharp. It has an intense flavor, with nutty and caramel notes that linger on the palate. Julie and Tony Hook, high school sweethearts-turned-cheesemakers, have been producing spectacular cheeses in Wisconsin since for over four decades. Unlike your typical processed supermarket cheddar, Hook's sharp Wisconsin cheddar cheese is full flavored, and fully natural. Bring to room temperature before serving and don't use for cooking and risk killing the flavor. Pair with a bold red wine like Bordeaux or with a stout beer.
Ingredients: Cultured pasteurized cow's milk, enzymes, annatto.
