Malvarosa
Similar to Manchego, Malvarosa is a new Spanish sheep’s milk cheese made from the milk of Giarra sheep, a species almost gone extinct. This is a mellower, more buttery and richer version of oil-rubbed Manchego, with a full flavored caramel taste.
Milky and smooth, Malvarosa is made in Valencia, by one sole producer, Enrique. He drains the cheese in cloth and lets it aged there for at least 3 months, for the unique “servilleta” shape. For the Eco-conscious, Malcarosa is the sole reason why the sheep still exists, so think of eating this delicious cheese as helping the survival of an entire species!
A rare cheese, Malvarosa is a solid palate-pleasing cheese for the cheese board, with a great firm texture and a buttery flavor. Pair with classic Spanish almonds like Marconas, and a bottle of Chateaunauf du Pape, Rioja or Tempranillo.
Ingredients: pasteruized Guirra sheep's milk, rennet, enzymes, salt, calcium chloride, Lysosyme ( from egg), cheese cultures.
