Pantaleo is a unique and rare goat’s milk cheese coming from Sardinia. It is a wonderfully complex cheese bursting with flavors of herbs and hints of lemon and lime in its floral finish. It has a thin pale-yellow rind and ivory paste that emits a caramel-like scent, enticing you to indulge in this fine cheese.
Most cheeses that come from Sardinia are made using sheep’s milk. However, Pantaleo comes from Capra Sarda goats’ milk, making it a special cheese. It matures for no less than 100 days and follows a similar recipe to Fiore Sardo – a traditional sheep’s milk cheese from Sardinia.
The firm to dry texture of Pantaleo makes it perfect for grating and shaving over pastas, risottos and salads. Its unique flavors will enhance any dish or cheeseboard it is added to. Shave over warm vegetables to create an impressive side. We recommend you serve it alongside un-oaked Chardonnay or a dry sherry to complement its robust taste.
