Chabichou du Poitou

The history of Chabichou is almost as old as goat cheesemaking in France. It began with the incursion of the Saracens into France around the 8th Century. Having been defeated and driven back, the Saracens left their goats and the recipes for this cheese, so the legend tells. Chabichou is one of those perfect little cheeses that you can't go wrong with. It is rich without being overpowering, delicate but still dense and delicious on the tongue, with a sweet flavor and a nice tangy finish. The epitome of the perfect chevre. The wrinkled moldy rind can vary from yellow to greyish/blue, with the pate white and chalky. Pair with a Sauvignon Blanc, Sancerre or Pouilly-Fumé. Serve small thick slices on crackers.
Ingredients: Pasteurized goat's milk, salt, lactic ferments, rennet.
