Fiore Sardo is a classic firm Italian cheese made from sheep’s milk on the gorgeous Italian island of Sardinia. Its rich, straw-yellow paste boasts impressive game-y and smoky flavors with a nutty finish. This cheese is typically matured for a minimum of 3 months before being released, but can also stay in the aging caves for 6 months. The length of maturity naturally impacts the flavor of the cheese; the aroma of milk and dried fruit is mild in the younger wheels and slightly spicy in older ones. Fiore Sardo was certified D.O.P in the early nineties, giving the assurance of quality and meaning that it can only be made within Sardinian provinces, exclusively using pure, unpasteurized sheep’s milk.
