This cheese is actually quite young – ripened for only 7-10 days – but is perfectly suited for longer ripening, which means depending on how long you keep it, it becomes a dense, creamier cheese. In the classic truncated pyramid shape of Valencay, and coming in 10 oz., Piper’s by Capriole is the perfect cheese board cheese – mild enough to match most cheeses, but also unique and spicy to stand on its own.
Pipers Pyramide is robust enough that you can match it to the bolder flavors of spices nuts, pickled fruits and vegetables, and hearty meats and charcuterie like Smoking Goose’s Gin n’ Juice and Fireball salami. Other ways to savor it: stuff a piece inside a Poblano or a bell pepper and grill; add it to a salad; or create a twist on “prosciutto e melone” by wrapping a wedge of Pipers on a slice of melon.
When young and fresh, pair with Vouvray, Pouilly Fuisse, Rose, Sancerre or Prosecco, a light gin cocktail or wheat ale. When aged and ripe, it’s a great partner to Moscato and Sauternes, chocolate and sweet compote.
