Sofia Ashed Goat Cheese
A first place winner at the American Cheese Society in 2014, Sofia is an incredible goat cheese crafted by Capriole creamery in Indiana. Unlike so many log-shaped or round chevres, Sofia is a long, flattened rectangle, coated in ash and with an additional layer of ash cutting the cheese in half. It develops a rich, creamy texture that feels silky and dense on the tongue. The flavor is mild and delicately sweet, milky but growing sharper and tangier with age – Sofia is only aged about a week, making it a very young cheese, and can last about two weeks refrigerated.
Serve Capriole’s Sofia on a cheese board with some sweet berries, spread over fresh bread or add to a salad, and pair with a bottle of light white wine or champagne.
Capriole is located in Indiana among verdant rolling hills and the Ohio River. Judy Schad and husband Larry amassed a herd of friendly organic goats, and started developing what would later become award-winning goat cheeses. Truly one of the pioneers of American artisan cheese-making.
