Sbrinz is a full-bodied and aromatic extra hard cheese from Central Switzerland. Impressively, it is still manufactured in a handful of dairies, following the traditional methods developed centuries before, using just raw milk, rennet and salt.
This hearty, 100% natural cheese has no additives and is A.O.P certified as of 2002. The rounds of cheese are even stored in their place of origin in the mountains until they reach maturity and are ready to be enjoyed. It takes a long time for the spicy flavors to develop and therefore, Sbrinz is matured for no less than 18 months. The longer it is stored, the more pungent the taste and aromas become.
This delectable cheese can be served in a variety of ways, with its level of maturity being the deciding factor in some instances. At 18 months, it can be served sliced or shaved into thin rolls; an exquisite substitute for parmesan over pasta dishes or salads. At 24 months, it can be plated up as an aperitif or broken into pieces as part of a cheeseboard. It also melts without separating and can be used to enhance pasta sauces or have as fondue.
