Zamorano
Sweet and nutty with subtle salt notes, Zamorano by Marques del Castillo is a flavorful sheep’s milk cheese from the Zamora province in Spain. Zamorano is made exclusively with Castellana sheep’s milk, known for their fatty, rich milk, which really carries over into this cheese. Sometimes confused with its Spanish cousin Manchego, Zamorano is less grainy, with more notes of burnt caramel. You’ll notice the firm and crumbly texture the moment you make your first cut.
Zamorano is aged for six months and is a protected cheese by its Denominación de Origen. This label ensures that the milk comes from the Churra and Castellana sheep, and the proper production techniques are used. Note that the darker color of this cheese is a result of the production process as well - the cheesemakers rub each block with olive oil and turn it often to give it this distinct characteristic.
Traditionally Zamorano is a table cheese that pairs well with tempranillo or any sweet cider. It works great as part of a cheeseboard and can be paired with a variety of nut and charcuterie selections.
