Fresh Goat Cheese was created by Allison Hooper and Bob Reese in the 1980s, back when chevre was virtually unheard of in the USA. A chef requested they make an American goat's cheese that could match the high quality of Frenchmade chevres. Needless to say, their offering more than lived up to the challenge, and since then, this luxuriously fresh and versatile cheese has become a favorite of chefs and cheeselovers alike, springboarding a whole line of goat's cheese products coming out of Vermont.
Made using fresh goats milk sourced from local family farms and coagulated naturally overnight, each cheese is drained and shaped into a log. With a simple, mild and fresh milk flavor, it can be used in any number of dishes - salads, pizzas, quiches, omelets, stuffed peppers, souffle, meats - or as a crowd-pleasing addition to a cheeseboard. Either way, this is the kind of goat's cheese guests will talk about long after the slate's been cleaned.
