Vacherin Fribourgeois
This cheese is the secret for a traditional and delicious fondue. Vacherin Fribourgeois is produced in the canton of Valois, Switzerland, from milk of cows that graze on sweet grasses and flowers. The cheese is aged for about 3 months, developing a pale yellow color and a thin, craggy rind with a noticeable but mild aroma. The texture is firm, buttery on the mouth and soft, the texture pleasantly sharp, with notes of nuts, grasses and hays. Use for a fondue, but also for any other melting, such as hot sandwiches and quiches. The slight sweetness of the cheese makes it a nice choice for a dessert plate, paired with apples and pears. Serve with a well-rounded Burgundy or Cabernet Sauvignon.
