Once the too-short fresh truffle season is over, our suppliers - the best in Italy - take some of the best truffles of the harvest and carefully freeze them. Although many don't know this, truffles actually keep well when frozen, preserving the flavor, if not the intensity of the aroma or the integrity of the texture. They're great for garnishing and prepared dishes, and for adding truffle flavor when the elusive truffle is out of season.
