Teleeka means “three” in Miwok which is the Native American language Tomales uses to name all of their fantastic cheeses. The Miwok Tribe were the original owners of the land where the cheese is now produced. The number three is important because it describes the three milks used to create this gooey pasted cheese: cow, sheep, and goat. Teleeka by Tomales Farmstead Creamery oozes with flavor within this blend.
Inspired by the Italian cheese La Tur - La Tur, Teleeka has buttery, grassy aromas with a buttery tasting outer edge. However, when you bite into it, the inner paste is much more bitter and is where the sheep and goat milk come to life. Overall, the texture is very creamy. A lot of that creaminess comes milk sourced from Jersey cows just a couple miles down the road from the creamery. Jersey cows have higher concentrations of butterfat and protein which makes for creamy cheese.
Teleeka is soft ripened, so it’s perfect for spreading over sliced baguette bread or water crackers. It pairs well with figs and fruit as the sweetness balances out the bitter and buttery flavors within the cheese. Use it as part of a cheese or charcuterie board for a surefire hit at your next gathering. Pair Teleeka with sweet, bubbly wines like champagne or prosecco. It also pairs very well with a light, fruity beer or cider.
Tamara Hicks and David Jablons bought the land for the Tomales Farmstead Creamery in 2003 and spent several years restoring the 160-acre farm. In 2007, they opened the goat and sheep dairy and in 2013 the Tomales Farmstead began making cheese. They take great care of their livestock and land and know every animal on their farm by name. Which is quite a feat considering they have 200 goats. The farm is Certified Organic and Humane.
