Ashbrook

Ashbrook is a supple, semi-soft cheese by Spring Brook Farm inspired by France’s Morbier cheese bursting with lactic and bright flavors and a funky finish. It has a distinctive layer of vegetal ash that runs through the center of its creamy paste from its aging process and boasts aromas of damp, dark cellar.

Spring Brook Farm produces this flavorful cheese using raw milk from Jersey cows belonging to their partner dairies. The wheel is halved horizontally the moment it can hold its shape and ash scattered between the halves to create the signature ash line through the paste. They then press the wheel to consolidate it, the two halves re-knitting over the 2 months of maturation.

A way to thoroughly enjoy this cheese and complement its roasted peanut aroma and delightful texture is by combining acidity and texture. Try it with a slightly sour Berliner Weisse or acidic Pinot Noir, serve it to friends with green peppers and other crunchy veggies or fruits with bright flavors that will cut through this pungent cheese.

Ashbrook is the third cheese created by Spring Brook Farm, who are dedicated to preserving the art of cheese-making and educating new generations to come. Their cheese house is designed with a glassed-in viewing area so that students can watch the cheese-makers work.
