Fougerus Coulommier
A lovely brie-like cheese, Fougerus is thus named for the fern or "fougere" that decorates it. Made by Rouzaire, a stellar affineur from Ile-de-France in the Champagne region of France, Fougerus is an artisan cheese, made in small batches following a more hands-on approach. It has a while bloomy rind that protects a densely creamy and buttery interior. The flavor is sweet with just a hint of saltiness, and mushroomy, herbaceous notes. The aromatic fern used for decoration is picked from the Loire Valley before it's sent out. Pair this with a sparkling Champagne for better enjoyment and serve with slices of rustic bread, crisp pears and sweet grapes on a cheese board. Bring to room temperature before serving.
