Mortadella with Pistachios

With its pale pink color, silky smooth texture and deeply rich hammy flavor, Olympia Provision’s Mortadella is a piece of charcuterie beauty. It starts with local , antibiotic-free, all-natural Oregon pork, which Olympia sources from sustainable farms. It is then seasoned with garlic and pepper, for a balance of sweet pork and warm spices that lingers in the mouth, with the liberal addition of meaty pistachios adding a pleasant crunch to the mix.

Similar to what Americans know as “baloney”, Mortadella is miles above the oily versions at the supermarket. Soft, light, rich and creamy, it’s salami that tastes like a ham, thanks to the fine grinding of the pork meat. To serve Mortadella the Italian way, slice it into paper-thin, airy slices and bunch them, rosette-style, on a meat platter. We love it in a sandwich paired with spicy Provolone cheese, or as part of a New Orleans Muffuletta.
