Cacao Noel's Dark Chocolate Mirror Glaze is a beautiful, shiny dark glaze that remains glossy after freezing. Use for coating cakes and pastries. Heat to 70-80ºC/ 158-176ºF. Stir with a spatula to avoid incorporating air bubbles. Apply this shiny chocolate glaze at 40-45ºC/ 104-113ºF.
