A Danish cow’s milk blue cheese that’s very similar to creamy Italian Gorgonzola, Mycella is a classic blue cheese, buttery and creamy, with a mellow flavor profile and a pleasant saltiness offset by a milky sweetness.
Mycella is an artisanal cheese made in the small island of Bornholm, on the Baltic Sea. Aged about 6 months, it’s a crowd-pleasing blue, lacking the piquancy of stronger blues, making it the perfect choice for any cheeseboard (it won’t intimidate) and great crumbled on salads and for cooking.

Q: How long would Mycella cheese keep in the refrigerator? Could we cut it into pieces and freeze the ones we aren't eating right away?
A: The Mycella cheese will last around 3-4 weeks refrigerated. It should be stored wrapped in parchment or wax paper and then loosely wrapped in a plastic bag. Freezing it might change its texture and it might lead to taste loss, so we do not recommend it.
