Historians date Fiore Sardo back to the Bronze Age, and it is the best-known cheese from the Italian island of Sardinia. Mitica Sardo is made with raw sheep’s milk and then coagulated with lamb rennet. Animal rennet from local lambs gives Fiore Sardo its distinct flavors.
It is a semi-hard cheese with sweet and nutty flavors and hints of caramel and saltiness. In the early stages of production, each wheel takes on subtle notes of smoke from stove fires that burn to heat the shepherd’s huts. This adds even more complexity to each bite.
Each wheel is produced from the milk of a single flock of Sardinian raised sheep. After aging in a shepherd’s hut for a month, cheesemakers transfer wheels to a cool cellar for an additional four (or more) months. The hot and dry atmosphere felt during aging is in stark contrast to the climate in Northern Italy. The milk, smoke, climate, and production process give the cheese a rustic and granular texture with flavors unlike any Italian cheese you’ve ever tasted.
This cheese is the perfect complement to any pasta dish and will accentuate the olive oil in any classic Italian recipe. You can also feature this cheese on any cheese or charcuterie board. Pair it with younger red wines like a nice chianti. Beer fans should pair this cheese with a pale ale as it works well with a little extra bitterness.
