The Drunken Goat® - Murcia Al Vino
Considering that there are cheeses in Spain that are centuries old, it's amazing how quickly this 30-and-change newcomer became a classic. Murcia Al Vino, or The Drunken Goat, is made from local Murcian goat cheese. This particular Mitica cheese is bathed for three days in a local wine called Doble Pasta. After three months of aging, the Drunken Goat cheese develops a gorgeous purple rind and a sweet, smooth flavor.
Ingredients: Pasteurized Murciana Goat's Milk, Rennet, Salt, Cheese Cultures. Bathed in Monastrell wine.

Q: How long does a wheel last if refrigerated and uncut? If cut in half?
A: The shelf life is a year from the production date. Once cut, keep it well wrapped and store between 39° F and 46°F (4°C and 8°C) and it will last for at least 1-2 months.
Q: Since drunken goat cheese is soaked and wine, are you supposed to eat the rind?
