Calasparra Rice (Paella Rice)
Grown in the mountains of Murcia, irrigated by fresh mountain water from centuries -old Roman aqueducts, Calasparra is the classic Paella rice. Calasparra has a number of characteristics that make it the perfect rice for this Spanish dish, however, the most importantly is its super-high absorption. Calasparra is very dehydrated, which means that it will readily suck in all the flavors and nuances of the broth it's cooked in, all those spices and incredible vegetable flavors. Also, Calasparra is a short-grain rice that always cooks al dente and is almost impossible to overcook. The flavor is smooth and rich. Tip: if you're going to tackle a Paella, don't forget high-quality saffron threads!
