Lou Bergier Pichin Cheese
Lou Bergier Pichin is a semi-soft Toma (round) cheese from Piedmont, Italy. It's made using raw milk from the Fiandino’s family purebred Bruno Alpino cows. It’s a unique mix of French and Italian traditions- the use of day-old whey is Italian, while the tomme shape is French. Lou Bergier has the aroma of mushrooms and barnyard; its flavors are bright: grass, milk, and citrus. It features a pale yellow, velvety paste inside its mottled brown rind.
These wonderful flavors develop as the cheese ages for 60 days, and also thanks to its unique production method, which Fattorie Fiandino has coined the “Kinara” method. The Kinara method relies on mountain thistle flowers as the rennet.

Take advantage of its full-flavored creaminess and melt into a potato and thyme pie or a fresh pea soup.
