Gorgonzola by Hook’s Cheese Company is aged about a year in cheese caves that were built into the hills near Mineral Point, Wisconsin, over 150 years ago. The proprietors, college sweethearts Tony and Julie Hook, carefully control the temperature and humidity and use a slow curing process that ages this Gorgonzola to perfection. Every few months, all of their batches are taste-tested to ensure quality and that the aging process is running smoothly.
This couple started their company over 40 years ago in 1976. Since then, they have won cheesemaking awards on the local, state, national and world level. This gorgonzola won 3rd place at the American Cheese Society Competition in 2010 and 2nd place at the World Cheese Championships the same year.

Gorgonzola by Hook’s Cheese Company is a living food and the maturation process never really stops. To maximize the shelf life of the cheese, cut the wheel into wedges and wrap it in a layer of wax or parchment paper and then add a layer of plastic wrap or aluminum foil after opening. A properly stored Gorgonzola wedge will last about 3-4 weeks in the refrigerator.
