Ruby Mixed Milk Cheese

Meet Ruby, a delightful American cheese with a bloomy rind, full of buttery and floral flavors and a wonderfully creamy texture. It is pleasantly tangy with an almost yogurt-like taste when it is young, and then becomes fruitier with age.

Ruby is made at Green Dirt Farm in Weston, Missouri, a lushly verdant area where the farm and creamery raises their ewes and makes their wonderfully cheese. Made with sheep’s milk sourced directly from their own farms, Green Dirt sources rich Jersey cow’s milk comes from a trusted neighboring farm. Both farms are Animal Welfare Approved, which means that their animals are treated humanely and fairly.

This subtle cheese lends itself beautifully to cooking as it melts superbly - We recommend layering it over flat bread pizza and then adding your favorite toppings. You can also enjoy it as part of a spicy arugula salad, over a burger, or with a variety of charcuterie, accompanied by a glass of oaky Chardonnay or a mild creamy beer.
