Our Livarot Coupe by E. Graindorge is creamy, smooth and full of flavor. Each bite has nutty and spicy notes surrounded by light citrusy flavors. This is one of the oldest of all the Normandy cheeses and is quickly noticeable by its pungent aroma. Cheese connoisseurs love by s around the world for its soft, melt-in-the-mouth texture. Leave it out until it reaches room temperature and it will run a little. That’s when the flavors really come out!
Inspect the rind and you’ll see Livarot’s most recognized feature. The washed rind looks similar to that of a French army colonel’s uniform, so this cheese was appropriately nicknamed ‘The Colonel.’ Also, the rind is colored with annatto which gives it a yellow-orange coloring on the crust.
E. Graindorge is also known for using the highest quality milk in the Normandy region. In fact, E. Graindorge is one of the few fromogeries in the world to carry out DNA bacterial testing on its milk before letting it mature. All of their milk comes locally from grass-fed Normandy cowherds.
Livarot works very well as part of any cheese or charcuterie board. Try it with sliced baguette bread fresh from the oven and you’ll be in heaven. Combine Livarot with bacon in any recipe for added flavor. Pair it with full-bodied red wines like Cabernet Sauvignon or with strong hard cider.
