Gelpan Hot-100 - Hot Process Gelato Base
Gelpan Hot 100 is a hot process neutral gelato base. It is used to make gelato, sorbet, and other frozen churned desserts. It makes a very stable base that makes a soft and creamy frozen treat, and does not crystalize or melt early. Mix with sugar, milk, and flavoring to make a variety of gelato and sorbet flavors.
Hot processing is a popular method of gelato preparation that involves a pasteurization step in which the mix is heated to 85°C for a few seconds prior to freezing. This encourages stabilizers and emulsifiers to function correctly, and ensures a microbiologically safe mix. After heating, similar to cold processing, the mix is put in a batch freezer to cool, freeze, and incorporate air into the mixture. Hot processing is popular for gelato production because it works with a wide range of recipes, and extends the shelf life of the finished gelato. Though with any process, gelato and sorbet should be made fresh and often.
Gelpan Hot 100 gelato base has a 24 month shelf life.
Ingredients: Skimmed milk powder, maltodextrin, dried glucose syrup, dextrose, cocoa butter powder, milk fat, emulsifiers: lactic acid esters of mono- and diglycerides of fatty acids, mono- and diglycerides of fatty acids, propylene glycol esters of fatty acids, stabilizers: guar gum, locust bean gum, carboxymethylcellulose, lactose, milk proteins, natural flavoring, soy flour.
