This is a convenient neutral base for making gelato and sorbet. Made by Gelatech, from Italy, Gel Mix Cold 50 is a cold process mix with a water base. It is a dry ingredient meant to be mixed with sugar, water, and fruit in a batch freezer during cold process sorbet preparation. This gel mix has a water base, rather than a milk or dairy base, meaning it is suitable for customers with dairy intolerance. Ideal for making creamy frozen fruit sorbets.
Popular sorbet flavors include cherry, strawberry, raspberry, lemon, and lime. More exotic flavors include lychee, kiwi, red wine, and blood orange.
In cold process gelato preparation, gelato is prepared quickly and efficiently without sacrificing flavor or texture.
