Like garlic powder, granulated garlic is pure garlic, dried without any additional salts, spices, or flavors added. But whereas powdered garlic is finely ground, resembling the texture of flour, granulated garlic is a coarse ground garlic powder, resembling the texture of cornmeal.
It is best used in casseroles, stews, soups, and dishes with long cooking periods that would break down and loose the flavor of the more finely ground dried garlic. Additionally, similar to coarse ground black pepper, granulated garlic is ideal for seasoning thick steaks, ribs, and roasts for grilling.
Use granulated garlic in dry rubs, and coarse seasoning blends. Dry roast the granulated garlic before using to unlock a mellow nutty flavor without the sharp pungent intensity of raw garlic.
If substituting dried garlic for fresh garlic in a recipe, approximately 1/8 teaspoon is equal to one garlic clove.
